Although Michael Smith is the reigning king of Canadian cuisine, he was born south of the border in New York. He graduated with honors from CIA (Culinary Institute of America) and also holds a degree from the Rochester Institute of Technology. His craft was perfected during stints working in London, South America, the Caribbean and New York City. In 1999 he opened his own eatery, Maple, in Halifax, N.S., to rave reviews. He then parlayed his restaurant's success to a budding TV career with Food Network Canada. Chef Michael Smith’s TV credits include The Inn Chef, Chef at Home, Chef at Large, Chef Abroad and Chef Michael’s Kitchen.
